U-Cook - Thai One On with Chef Eric B. Lewis

posted by servicedoctor1 on Jun 8th, 2009 at 8:52 am

Chef Eric B. Lewis is no stranger to service. Formerly the executive chef at Samaritan House of Atlanta, his first memories of catering revolved around private parties for friends and coworkers. With roughly ten years of experience under his belt, Lewis' ingratiating spirit and culinary imagination have earned him praise from food critics and diners alike.

Lewis' first foray as a restaurant chef was Elegant Soul, a self-owned catering company in Atlanta. At Elegant Soul, east met west with succulently-fused French and American flavors in artistically presented dishes. From there Lewis ventured into a more buffet-style setting at the Crown Plaza Ravinia Hotel, preparing high volumes of foods for countless guests to the city. He quickly advanced from kitchen staff to executive sous chef at The Cabin Room, where he was second in charge of maintaining and supervising kitchen activities. It was here that Lewis honed in on his managerial skills by learning everything from purchase orders to supplies.

Looking to carry his culinary experience to a different venue, Lewis accepted a position as catering chef at Emory University. While at Emory he carefully designed menus for some of the most vocal food critics - college students. After a successful stint with Emory, Lewis continued his educational theme as food service director at the Morehouse School of Medicine. While at Morehouse, he was responsible for an array of areas including staff training, labor scheduling and menu development.

In 2006, Lewis served as executive chef at the Kroger Test Center. He worked closely with the company's corporate chef to implement new pre-packed product and give it a gourmet spin.

In 2007, Lewis served as an ACF mentor, coaching and preparing high school students for the Pro Start National Culinary Competition. Under his tutelage, he led the students to a second place finish.

Lewis has received various awards and accolades for cold food, seafood and four course preparations. In 2008, Lewis was tapped to serve as the Culinary Expert for burgeoning on-line magazine, StarChild.

Recently, Lewis - always in tune with popular tastes - re-visited and embraced his dream as executive chef and owner of Elegant Soul Catering.

Lewis received his associate degree in Culinary Arts from the Art Institute of Atlanta in December 2003.
